Summary Statement

The Cook is responsible for preparing food for student borders ages 11-18 as well as other visitors to the RWB Dining Hall and catering clients. Reporting to the Head Chef and working as a part of the kitchen team, the Cook works to ensure the highest quality standards of food preparation are maintained and all licensing requirements are upheld.

Major Duties and Responsibilities

  • Cook food according to menus, special dietary or nutritional restrictions and numbers of portions to be served
  • Clean, cut, and cook meat, fish and poultry
  • Clean and inspect kitchen equipment and work areas to ensure cleanliness and functional operation
  • Apportion and serve food to facility residents, employees, or patrons; direct activities of one or more workers who assist in preparing and serving meals
  • Clean and sanitize work areas, equipment, utensils, dishes and silverware
  • Compile and maintain records of food use
  • Take inventory of supplies and equipment
  • Assist in training processes to new employees and existing employees as requested
  • General supervision of the RWB Dinning Hall which includes follow up with students, clearing and cleaning tables, and responding to requests
  • Keep kitchen area and dining areas clean at all times, ensuring the highest standards
  • Store food in designated containers and storage areas to prevent spoilage
  • Receive and store food supplies, equipment and utensils in refrigerators, cupboards and other storage areas
  • Perform other duties as assigned

Working Conditions
This position works in a kitchen/dining hall setting and requires standing for long periods of time, lifting boxes and containers weighing up to 22 KG (50lbs), and working with commercial style equipment. This position works with non-negotiable time lines with daily shift start times as early as 6:00 am, typically working Tuesday – Saturday. The person in this position is required to wear a chef's jacket, an apron, including a hairnet (supplied by the RWB) or another suitable head cover alternative, long pants and closed toed shoes with stockings. Latex gloves are provided for food handling.

Education and Qualifications

  • Diploma or certificate in a Culinary Arts or Commercial Cooking program; an equivalent combination of education and related experience will be considered
  • Knowledge of raw materials, production processes, quality controls and costs
  • Knowledge of food production techniques and equipment, including storage/handling techniques
  • Knowledgeable of childhood/athletic nutrition an asset
  • Knowledge of Excel, Word, and Sage Accpac an asset
  • Manitoba Food Handler Certificate
  • Clear Criminal Background Search Certificate
  • Clear Child Abuse Registry Check Certificate
